I've found that when buying ox tongue, specifically requesting a non-salted
tongue works well at the local butcher. For leftovers, try the Mexican
classic "Tacos de Lengua", or ox tongue tacos. Very delicious!

Just came across your site, looking for recipes for the tongue I've just got out of the freezer to defrost.

Last time I cooked tongue I did Hugh Fearnley-Whittingstall's Tongue and Tail recipe. Essentially you cook the ox tongue and ox tail very slowly in a pot with onions, carrots, celery, turnips and herbs, with enough water, until tender.

Then add 1/2 a bottle of red wine to the stock, reduce it to a sauce, prepare the meats (skin the tongue, chop into pieces, remove tail meat from bones) and add it back to the sauce. Easy, and delicious but a bit time consuming.

Hi Alex. I do like potted tongue but was a little put off by how long it takes to make. I might try it with the net tongue I buy.

Hi Trig. I knew one of my regular commenters would test out the auto-rejector and I should have guessed you'd be the first. Luckily all the IPs from trusted sources are immune to the auto-rejector. ;)

Hi Richard. That sounds really good but I wonder if I would have the patience to let the tongue go cold before eating it.

Hi Charlotte. I found the tongue in Waitrose but I'm sure any local butcher would get one for you too. It would probably be worth asking H G Walters by Baron's Court.

Hi Schmoof. I wonder if the Year 9s appreciate it as much. Somehow I don't think they do...

Happy New Year to you all!

I have never cooked Ox tongue - But I will try.
The idiot feature sounds perfect - but I fear it might cancel out my entire blog if I install it.
Hope you had a good Christmas and have a good new year 2008.

I love ox tongue - and lamb's tongue too... The only problem is that you have so much of it that you don't know what to do with it all. If only cattle had smaller tongues...
I love it cold with a sauce made from oil, vinegar, mustard, capers and chopped gherkin... Hope I've spelt that correctly and don't get rejected by your idiot filter! Happy New Year, Ros!

You should find a recipe for potted tongue - it is fantastic, relatively easy to make - and finely sliced and with plenty of mustard - brilliant for sandwiches!
