For the Beef 

  • 1 fillet of beef, sliced againt the grain into 1cm  thick slices,
  • 2 tsp cumin,
  • 1 tbsp soy,
  • 1 clove crushed garlic,
  • 1 cubic inch ginger, crushed 
  • half handful chopped corinder leaves
  • 1 chopped red chilli.

Mix all the ingredients except the beef together in a bowl. Toss the beef in the marinade until it is coated. Leave to marinate for 30 minutes, tossing the beef in the marinade every 10 minutes or so to make sure it is still coated.

For the Peanut Sauce

  • 2 tablespoons smooth peanut butter.
  • 100ml coconut milk.
  • 1/2 tbsp fish sauce,
  • dash soy sauce.

Stir the above ingredients together over a low heat until smooth. If the mixture becomes too dry, add a little more coconut milk.

To Assemble: 

In a very hot frying pan, stir fry the beef fillet strips for about 1 minute. Serve them over cooked noodles or rice with the peanut sauce poured over. Garnish with fresh red chilli.
