Ingredients:

  • Meat from 1 hare hind legs or 2 foreleg joints 
  • 1 clove crushed garlic
  • 1 tsp dried mixed herbs or fresh thyme
  • A little oil 
  • 1/2 onion, diced
  • 1/3 bottle red wine
  • pinch chilli flakes
  • 30g dark chocolate
  • Splash brandy
  • Pasta or rice to serve 

Method

  1. Remove the hare meat from  its bones and cut into small pieces.
  2. Put the meat into the blender in batches to mince the meat.
  3. Take the ground meat and put it into a bowl add the garlic, herbs and beaten egg. Mix well with your hands and form into small balls.
  4. Fry the onion in some oil Until it is starting to brown.
  5. Dust the meat balls with flour and add to the pan.
  6. Stir them gently as they cook. Once the outsides of the meatballs have browned, add the red wine and chilli flakes and simmer gently.
  7. When the volume of liquid has reduced considerably and the sauce is getting fairly thick, add the chocolate.
  8. Stir until the chocolate has melted into the sauce. This should thicken the sauce a bit.
  9. Throw in a splash of brandy. Simmer for another couple of minutes and serve over rice or pasta.
