Guinea Fowl

1 oven ready guinea fowlÂ 
1 orangeÂ - zest and juiceÂ 
50g butter
2 tbsp honey
1 tsp ground cinnamon
pinch nutmeg
1 tsp ginger powderÂ 
5-10 cloves
1 small cinnamon stick
a large piece of ginger slightly crushedÂ 
2 sprigs rosemary


Warm the butter until it is soft enough to mash.
Combine with the zest and juice of 1/2 the orange and mix well.
