Serves 2 very Generously. Cost: Approximately £3.20  

Ingredients

  • 500g beef mince
  • 2 cloves of garlic,
  • 1 tablespoon dried mixed herbs
  • 1 large onion, finely diced
  • Oil for frying
  • 1-2 tsp hot chilli powder
  • 2 small eggs
  • Flour (about 20g will do) 
  • half aubergine, cut into small pieces
  • 1 can plum tomatoes
  • 1 lamb stock cube
  • 225g dry spaghetti, cooked and tossed in a little oil to serve.

Method

  1. Fry the onions, 1 clove of garlic and  half the herbs and chilli powder together in some oil until the onion is soft and golden brown.
  2. Beat the two eggs. 
  3. Place the mince into a large bowl. Add two thirds of the onion mixture. 
  4. Add the egg a little at a time. Mix these together well with your hands. 
  5. Form the meat into balls about one inch in diameter.
  6. Roll the meatballs in flour and transfer to a pan with hot oil in it.
  7. Fry the meatballs with the remaining garlic until they are brown on all sides.
  8. Add the aubergine and fry until it has cooked. Add the rest of the onion mixture.
  9. Chop the tomatoes and put them in the pan with their juice.
  10. Crumble in the lamb stock cube and add the remaining herbs and chilli powder.
  11. Mix well and simmer until the sauce is thick
  12. Serve over the cooked spaghetti.
