Ingredients: Enough for 1 as a side dish

  • 2 small white potatoes, peeled and cut into half inch cubes
  • 3 stems, coriander, roughly chopped
  • 1 tsp mustard seed
  • 1 tsp whole cumin
  • 1/2 tsp turmeric.
  • 3 small curry leaves, torn in half


  1. Fry the mustard and cumin in vegetable oil on a low heat until the mustard is just starting to colour.
  2. Add the potato, turmeric and leaves. Turn up the heat to medium and fry until the potato is cooked though ( 5 mins)
  3. When the potatoes are cooked and golden brown add the coriander and stir in. Leave tot cook for a minute and serve.
