Ingredients

For The Marinade

  • Lemon infused olive oil to cover
  • squeeze of lemon
  • dash of soy sauce
  • clove of garlic, crushed
  • 1 cubic inch ginger, crushed

Also

  • 1 tuna steak
  • 25g sesame seeds

For the noodles

  • 1 portion fine noodles, part cooked
  • 1/2 can coconut milk
  • 3 large dried lime leaves
  • dash fish sauce (nam pla)
  • 1 red bird’s eye chilli, chopped
  • small handful coriander leaves, roughly chopped
  • 1 clove garlic, crushed
  • 1 cubic inch ginger, crushed
  • 1 lemongrass stalk, chopped and bruised
  • Squeeze of lemon and lime

Method

  1. Combine the marinade ingredients in a dish large enough to hold the tuna steak. Mix well. Marinate the tuna in the mixture for 2-6 hours.
  2. Put the coconut milk in a pan with the lime leaves and simmer gently.
  3. Add the crushed garlic and ginger, chillies, fish sauce, and lemon grass and half the coriander. Simmer for about 5-10 minutes until the dressing starts to thicken.
  4. Add a squeeze of lemon and lime and the rest of the coriander.
  5. Toss the noodles in the dressing.
  6. Coat the marinated tuna with the sesame seeds and fry on a high heat for 30s to 2 mins on each side, depending on the thickness of the steak.
  7. Serve with some steamed pak choi.
