Chorizo and Taleggio Penne 

Ingredients (Enough for two with a salad accompaniment) 

  • 3 links (approx 200g) Brindisa dolce chorizo or other similar chorizo, chopped into small pieces. 
  • half a large onion, finely diced
  • 1 large clove garlic, crushed
  • 100g taleggio cut into small pieces
  • 60g marscapone
  • 10 leaves rosemary, minced
  • Grated cheddar to top

Method

  1. Preheat oven to gas mark 6. 
  2. Cook the pasta according to the packet instructions. 
  3. Meanwhile sautee the onion, rosemary and garlic on a low heat in olive oil. 
  4. Add the chorizo pieces and fry until cooked.
  5. When the pasta is cooked, drain and add the taleggio and marscapone. Stir through until the cheese has melted and coats all the pasta.
  6. Add the chorizo and onion mixture and mix into the pasta.
  7. Transfer to an oven proof dish, top with cheese and place in the oven.
  8. When the cheese on top is bubbling, (10 minutes or so) remove from the oven.
  9. Serve with a side salad.
