Rare roasted lamb 


  • 1 half leg of lamb (approx 1.3kg, bone in)
  • 5 or 6 cloves of garlic, cut into about 8 slices
  • 2 sprigs rosemary
  • 1 tablespoon ground lavender


  1. Preheat the oven to gas mark 7.
  2. Using a sharp knife, make slits all over the lamb leg meat about 1 inch deep and wide. Stuff a garlic slice into each slit and a tuft of rosemary leaves 
  3. Rub the powdered lavender all over the lamb leg. 
  4. Place the lamb in the oven. Roast at gas mark 7 for ten minutes and then lower the heat to gas mark 5 and cook for 25 minutes per pound (450g) for rare lamb.
  5. Remove the leg from the oven, wrap in baking foil and rest for a third of the cooking time.
  6. Carveand serve with Creamed butterbeans and a green vegetable..
